Today, (July 20, 2012) Starbucks opened their second Evolution Fresh concept store! It's at 517 Pine Street, in downtown Seattle, and adjacent to a small Starbucks. The first Evolution Fresh store opened up on March 19, 2012, in Bellevue, Washington, inside the popular Bellevue Square shopping center. This new store in Seattle is only about 500 square feet, and is designed as a place to grab your food and then head back to your office (or head home if you live in downtown Seattle.) The store feels a little bigger than its size due to its tall ceilings. The entire design is in very natural colors, and so the natural beautiful colors of juice and food don't compete with a busy store design. The juice colors and tones are the "hero" of the store design. One store design element that I thought was really cool was this:
^That is a board where regular customers can write down their regular juice blend. It seems so interactive with customers to have an ever changing list of customer favorite juice/smoothie blends on a dry erase board. This wasn't something done at the Bellevue Evolution Fresh store, so it's a new touch.
The food area offers many of the same foods found at the Bellevue Evolution Fresh. However, the cold case has a lot more pre-made ready-to-eat food items. I am actually really impressed that they area able to offer so much food in such a tiny space! The protein add-in offerings for the salads have changed. Previously, at the Bellevue Evolution Fresh, a customer could add either chicken or steak to a salad. As I understand it, steak wasn't nearly as popular of a seller as the chicken. Steak has been eliminated as an option: it's chicken or tofu now.
Organic Apple Juice has been added as a fresh juice option from the juice dispensers. Apparently, in Bellevue parents requested Organic Apple Juice as an option for kids. My favorite juice might be the bottled Carrot Orange Mango. It's hard to decide!
From what I hear, two more Evolution Fresh stores are planned for sometime this fall. I hear that one will be in San Francisco, and the other in Seattle again.
